Chocolate chip brioche casserole

Prepare a soft brioche with cocotte baking for a light crumb, crispy crust and delicate flavor.

  • 500g flour
  • 20g fresh baker's yeast
  • 120ml milk
  • 60g thick cream
  • 50g caster sugar
  • 80g butter
  • 1packet of chocolate chips
  • 1pinch of salt

Recipe

Step 1

In a bowl, beat 2 eggs, the crème fraîche. Crumble the yeast, pour in the milk. Add the flour, sugar and salt. Knead for about 15 min

Step 2

When the dough starts to form a ball, add the butter cut into pieces. Knead again.

Step 3

Form a ball and leave to rise overnight in the refrigerator or 2 hours at room temperature.

Step 4

On a well-floured work surface, add the chocolate chips, knead again by hand. Divide the dough into 6 pieces.

Step 5

In the casserole dish, arrange the pieces to form a flower.

Step 6

Close the casserole dish and leave to rise for 1 hour at room temperature or in the oven when it is off.

Step 7

At the end of the rise, brown the brioche with the egg yolk. Replace the lid. Bake at 180°C for 40 min.

Step 8

If the brioche touches the lid, remove it and continue cooking.

Step 9

Unmold the brioche when it is very cold.
