  • 1 bag of quinoa
  • 1 zucchini
  • 1 pepper
  • cherry tomatoes
  • 1 eggplant
  • Feta cheese
  • Olive oil
  • salt and pepper
  • 1 bunch of mint

Recipe

Step 1

Preheat the oven to 180°c.

Step 2

Wash and chop the vegetables, place them in a baking dish and drizzle with olive oil. Mix. Bake for 30 minutes.

Step 3

Meanwhile, cook the quinoa as directed on the packet. Refrigerate after cooking.

Step 4

Put the quinoa in a bowl, add the grilled vegetables and crumble the feta. Season with salt and pepper. Add the olive oil.

Step 5

Mix and chop some mint.
