Lemon squares

- 200g flour
- 75g brown sugar
- 150g soft butter
- 100g sugar (for the lemon cream)
- 3 eggs (for the lemon cream)
- 3 lemons (for the lemon cream)
- 2 tablespoons corn flour (for the lemon cream)
Recipe
Preheat the oven to 180°c
Mix the flour with the sugar and butter. If the dough is still a little sticky, add more flour. Crush this dough on the bottom of your mold to the same thickness.
Bake for 20 minutes.
Meanwhile prepare the lemon cream, in a bowl mix the eggs with the sugar.
Squeeze the 3 lemons to obtain the juice. Mix the juice with the cornstarch. Add the zest of one lemon.
Put everything on a low heat. Mix until the cream thickens. Set aside.
When the biscuit is cooked, place the cream on top and put it back in the oven for 5 to 10 minutes.
Leave in the refrigerator for 1 to 2 hours.
Sprinkle with icing sugar and pieces of lemon.
