- 6 egg whites
- 330 g sugar
- 1.5 tbsp cornstarch
- 1.5 tsp lemon juice
- 50 g mascarpone
- 75 g whole liquid cream
- Raspberries
- Strawberries
- Blackberries
- Blueberries

Step 1
Preheat the oven to 100°c
Step 2
Place a salad bowl, the whisks, the crème fraîche and the mascarpone in the fridge
Step 3
Separate the egg whites from the yolks. BE CAREFUL the eggs must be at room temperature
Step 4
Pour the egg whites, cornstarch and sugar into a salad bowl. Whisk until you get a meringue in the shape of a bird's beak. Then add the lemon juice. Mix
Step 5
Using a tablespoon, place the meringue in an ovenproof dish. Bake for 1h30 in a fan oven. Let the meringue cool
Step 6
Put the cream and mascarpone in the salad bowl, whisk until you get whipped cream
Step 7
Place the whipped cream on the meringue and arrange the fruit on top
