  • 3 tomatoes
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 onion
  • 1 garlic clove
  • 2 eggs
  • coriander

Recipe

Step 1

Heat a little oil in a frying pan. Mince the onion, then add it to the pan with the garlic clove.

Step 2

Wash and dice the tomatoes and peppers.

Step 3

Place in skillet. Season with salt and pepper.

Step 4

Cover with water and simmer.

Step 5

Just before serving, break in the eggs and cover.

Step 6

Sprinkle with coriander.
