  • 350g de farine
  • 230g de beurre
  • 2.5 cuillères à soupe de sucre
  • 1 pincée de sel
  • 115mL d’eau froide
  • 800g de cerises dénoyautées
  • 1/2 jus de citron
  • 150g de sucre roux
  • 30g de maïzena
  • 1 sachet de sucre vanillé
  • 1 oeuf pour la dorure

Step 1

Preheat the oven to 180°c

Step 2

In a salad bowl, put the flour, salt, sugar and very cold butter cut into pieces. Mix.

Step 3

When the butter is well incorporated, add the water little by little. The dough should form a ball.

Step 4

Divide the dough in two, cover it with cling film and leave to cool for about 30 min.

Step 5

In a saucepan, stew the cherries, lemon juice, sugar and cornstarch. Mix, leave to cook for 15 min. Leave the mixture to cool.

Step 6

Flatten the dough. Line the tart mold, prick the bottom of the tart with a fork.

Step 7

Spread everything in the bottom of the tart. Make sure the mixture is very cold.

Step 8

Flatten the second piece of dough, make strips of about 2 cm. Make the grid on the tart. Pinch the edges well to seal them well.

Step 9

Brush the tart with the beaten egg. Sprinkle with brown sugar.

Step 10

Bake for 40 min.
