  • 200g grated carrots
  • 2 eggs
  • 120ml sunflower oil
  • 80g brown sugar
  • 150g flour
  • 1tsp baking powder
  • 1 pinch of salt
  • 1tsp cinnamon powder
  • 1tsp gingerbread mix
  • 100g walnuts
  • 150g cream cheese
  • 50g powdered sugar
  • coloured sugar dough to form carrots

Recipe

Step 1

Preheat oven to 175°c

Step 2

Wash, peel and grate the carrots. Set aside

Step 3

Mix the eggs, sugar and oil in a bowl.

Step 4

Add flour, baking powder, pinch of salt and spices. Mix well.

Step 5

Add carrots and walnuts. Mix well.

Step 6

Bake for 45 minutes (depending on the oven used), checking with the tip of a knife.

Step 7

Combine the Philadelphia and powdered sugar.

Step 8

When the cake has cooled, spread the icing.

Step 9

Make carrots with colored sugar paste and decorate the cake.
