  • 250 g canned chestnuts
  • 125 g sugar
  • 50 ml water
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 500 g mascarpone
  • 300 g chestnut cream

Step 1

Make a syrup with the water and sugar. Bring to the boil.

Step 2

Add the chestnuts and vanilla extract and simmer over low heat.

Step 3

Blend until smooth and creamy.

Step 4

Separate the whites from the yolks. Mix the yolks with the mascarpone. Then add the chestnut cream.

Step 5

Beat the eggs until stiff. Gently fold into the egg mixture.

Step 6

Pour the mousse into small jars and chill.
