An elegant two-salmon terrine, where the sweetness of the fresh salmon dances with the smokiness, wrapped in a delicate cream.

  • 500g de saumon frais
  • 250g de saumon fumé
  • 200g de fromage blanc
  • 100g de crème liquide
  • 2 feuilles de gélatine
  • sel et poivre
  • Aneth
  • Citron

Recipe

Step 1

Steam the fresh salmon.

Step 2

Line the bottom of the cake tin with cling film and arrange the slices of steamed salmon.

Step 3

Mix the steamed salmon with the fromage blanc and cream. Sprinkle with dill and add a little lemon juice.

Step 4

Soften the gelatine leaves in water, squeeze them well and add them to the previous mixture. Season with salt and pepper.

Step 5

Pour into the tin, on top of the slices of smoked salmon. Fold the slices to close the terrine.

Step 6

Leave to rest in a cool place for about 4 hours.
