Carrot and spinach flan

- 1 bunches of carrots (keep the tops for another recipe)
- Spinach shoots
- 1/2 onion
- 10cl of milk
- 10cl of thick crème fraîche
- 50g of flour
- Olive oil
- Pepper/salt

Recipe
Preheat the oven to 180°C.
Wash and peel the carrots, then cut them into rounds.
Dice the onion. Brown it in a pan with a little olive oil.
Add the carrots and brown for 15 to 20 minutes.
Meanwhile, beat the eggs in a salad bowl, add salt and pepper, add the milk and cream. Mix well.
Towards the end of cooking the carrots, add the spinach shoots and let them cook for a few more minutes.
Transfer the vegetables to an ovenproof dish and pour the egg mixture over them.
Sprinkle with grated cheese for extra indulgence and bake for 40 minutes.
