  • 50g flour
  • 100g almond powder
  • 80g icing sugar
  • 100g butter
  • 3 egg whites
  • 125g raspberries
  • Crushed pistachios

Recipe

Step 1

Preheat the oven to 230°c.

Step 2

Make a hazelnut butter. To do this, put the butter in a saucepan and let it melt without touching it. When it starts to crackle and brown, remove it from the heat and put it in a bowl.

Step 3

Mix the flour, icing sugar and almond powder. Add the egg whites and mix.

Step 4

Add the hazelnut butter and mix again.

Step 5

Pour the mixture into financier molds, push in 2 or 3 raspberries, sprinkle with crushed pistachios and bake for 15 min.
