In a salad bowl, pour the semolina, flour, salt, butter, oil and water. Knead the dough a little until you obtain a smooth and supple dough. Shape into balls of about 50 grams.
In a frying pan, cook the minced meat until its water evaporates. Add the chopped onion and pepper mixture. Stir then add the spices, salt, pepper and finely chopped aromatic herbs. Remove from the heat. Let cool before adding the harissa to obtain a slightly compact mass.
Roll out the dough on a floured work surface into a disk. Using a cookie cutter, cut out disks of dough. Place a teaspoon of meat on top. Fold the dough to form a half circle. Press with the back of the fork.
Place each brick on a baking sheet covered with baking paper. Brush with beaten egg yolk. Sprinkle with seeds of sesame.
Cook the bricks for 20 minutes.
Enjoy with a harissa sauce.
