Warm cross buns, deliciously scented with cinnamon, soft and generous, a golden delicacy, ready to seduce your senses.

  • 700g flour
  • 10g dry yeast
  • 375mL milk + a little for browning
  • 75g butter
  • 75g sugar
  • 2tsp cinnamon
  • 5g salt
  • 2 eggs
  • 150g raisins
  • 40g flour (for the crosses)
  • 2tsp sugar (for the cross)
  • 40g of water (for the crosses)

Recipe

Step 1

Melt the butter.

Step 2

Put the milk, eggs, salt, sugar, melted butter and cinnamon in a bowl. Then add the flour and yeast on top.

Step 3

Knead in a food processor or by hand until the dough comes away from the sides.

Step 4

Roll out the dough and let rise for 2 hours in a warm place.

Step 5

Deflate the dough and add the raisins.

Step 6

Shape 12 pieces of dough of equal size and place them in a dish without touching. Cover with a tea towel and let rise for another hour.

Step 7

Meanwhile, prepare the dough for the crosses. Mix all the ingredients together.

Step 8

Preheat the oven to 180°C.

Step 9

Brush the buns with milk.

Step 10

Put the dough in a piping bag and pipe crosses onto the buns.

Step 11

Bake in the oven for 20 minutes.
