Brie wreath

A gourmet crown of soft bread, enveloping delicious melted brie, sprinkled with pink berries and enchanting fragrances.

  • 1 brie cheese
  • 375g flour
  • 20g fresh baker's yeast (or 1 packet of baker's yeast)
  • 1 tablespoon of olive oil
  • 250ml of water
  • Salt
  • pink berries
  • 1 egg yolk

Step 1

Mix the flour, salt and baking powder. Gradually add the water. The dough should come away from the sides.

Step 2

Cover with a tea towel and let rise for 1 hour at room temperature.

Step 3

After 1 hour, degas the dough, cover with a tea towel and refrigerate overnight.

Step 4

The next day, preheat the oven to 200°C and place the brie on a baking sheet. Knead the dough into balls. If the dough is a little sticky, sprinkle your work surface with flour. Arrange the balls all around the brie.

Step 5

Brush the bread balls with egg. Add the pink peppercorns and rosemary and bake for 20 minutes.
