Baked green asparagus risotto

  • 1 bunch of green asparagus
  • 1 onion
  • 1L vegetable stock
  • 300g risotto rice
  • Parmesan
  • olive oil

Recipe

Step 1

Preheat the oven to 180°C

Step 2

Wash and chop the asparagus, keeping the tips.

Step 3

Fry the onion in a little olive oil. Add the rice and mix well. Add the asparagus.

Step 4

Add the white wine and half of the vegetable stock.

Step 5

Pour into an ovenproof dish.

Step 6

Put in the oven for 25/30 minutes.

Step 7

Add more stock if necessary.

Step 8

Fry the asparagus heads in a little oil.

Step 9

Remove from the oven and add the parmesan and the asparagus heads.
